Matteo’s career has taken him to Michelin-starred upscale restaurants in France, Spain and Mexico.

Prior to Les Roches he was the Executive Chef at Aperi in San Miguel de Allende, Guanajuato (Mexico), which was awarded Best New Restaurant and Best Hotel Restaurant during his tenure.

Matteo returned to Europe to become Head Chef at Roots, where he has found the ideal outlet to pass on his culinary knowledge while also enjoying the freedom to prepare fine cuisine from locally-sourced ingredients.
